Sweet & Spicy Breakfast Stack with Mina Harissa: So many delicious flavors in this recipe, your family will be begging for more. Turkey, sweet potatoes and peppers make for the perfect combination.
1 large sweet potato
1 lb ground turkey (I used Italian seasoned ground turkey)
1 bell pepper chopped
1/2 medium onion chopped
3 tbsp butter
1tsp garlic powder
Salt and pepper
Preheat oven to 375. Cut sweet potato into medallions. Melt 2 tbsp butter in a microwave safe bowl. Pour over potato and add garlic powder, salt and pepper. Toss lose until evenly coated in butter and seasonings. Place the potatoes on a baking sheet and bake for 30 mins, flipping them half way through.
In a medium skillet melt 1 tbsp of butter and add onions. Cook until soft. Add ground turkey and brown until fully cooked. Add in the bell pepper and cook for about 2 minutes. You still want the bell pepper to have a bit of a bite. Fry up a couple sunny side eggs.
To assemble, i did a bottom layer of the sweet potato medallions (roughly 5-6 medallions), topped it with the ground turkey mixture and finished it off with the fried eggs and of course Mina Harissa.
Mina has three heat levels of her Harissa, all of them are a perfect addition to any recipe. I dip chips straight into the spicy green chile Harissa. I’ve used the mild Harissa as a spaghetti sauce. The possibilities are endless and the taste is amazing. Move over Sriracha…Mina will literally be on everyone’s tongue within the year. Enjoy!
