Cheesy Bacon Corn Dip

Cheesy Sweet Corn Party Dip: I am a lover of all things food related! When I hear cheese, bacon, jalapenos, I think yes please! This quick and easy appetizer that will have your friends surely asking for the recipe.

I made this for the Super Bowl and prep time is very quick. Fry up bacon, crumble, chop the jalapenos and green onions and that’s it.

Corn dip ingredients

1 pack of bacon (cooked and chopped)
1 12oz bag frozen sweet corn
1 jalapeno (minced)
8 oz cream cheese
1 cup shredded sharp cheddar cheese
1/2 teaspoon salt
1 can Rotel (drain)
4 diced green onions

So easy! We used a small crock pot and added everything at once. Cook on low setting for around 3 hours or high for 1-1/2 hours. Stir from time to time.

Corn Dip

Serve with tortilla chips. If you are making this for a party be prepared that it will be gone faster than the time it took to make it. Don’t open your chips before it’s time to serve. We did a little taste testing before we served this delicious dip to our friends and it was half gone by half-time.

Filet Mignon with Caramelized Onions and Feta

Filet Mignon Recipe

Filet Mignon with Feta Cheese and Caramelized Onions: Valentine’s Day is right around the corner. If you plan on making a romantic dinner in the comforts of your home this is a perfect recipe to make.

The caramelized onions are key to this delicious dish, they truly are a labor of love but so worth the effort.

Ingredients:
2 large onions
1 Tablespoon butter
1 Tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon sugar

Onions

Start off by peeling and thinly slicing the onion, then separate into rounds. Heat the butter and oil in a large skillet over medium-low heat. Add the onions, cover and cook for 12-15 minutes, stirring about every 4 minutes.

Remove the cover and raise the heat to medium and add the salt and sugar. Continue cooking uncovered for 30-35 minutes, stirring frequently. Make sure to loosen any browned bits from the bottom of the pan, they are full of flavor. If your onions are sticking to the pan add some liquid one tablespoon at a time. The onions will have a very dark brown color to them when they are done.

Filet

Filet Mignon is such an amazing cut of beef it requires very little seasoning or preparation to cook to perfection. Set out your steaks at least a half hour before you are ready to cook them so they have a chance to come to room temperature. This will help them retain their moisture and get a nice sear on the outside.

Preheat oven to 375. Season the steaks with salt and pepper and lightly coat with grape seed oil. Heat an ovenproof skillet on high heat. Sear the filet’s for 3 minutes per side. Be sure to use a tongs to turn them. Place skillet in oven for 6-7 minutes for a nice medium-rare steak. You can adjust the time up or down depending on how you like you steak, but medium-rare is what is recommended for this cut of meat.

Filet Cast Iron Skillet

Remove skillet from oven and place the steaks on a plate to rest for 5 minutes. The steaks will continue to cook and will be juicier if left to rest.

Top your steaks with feta cheese crumbles (we enjoy the Mediterranean flavor) and caramelized onions. Pair with your favorite side dish and enjoy. We served ours with grilled vegetables and Yum Yum Sauce for a fantastic dinner.

Cucumber Hummus Flavor God

After making the delicious Sriracha Hummus we decided to try cucumber hummus. It is a toss up on which one is better, they are both really good.

The cucumber hummus was creamier than the Sriracha. I am guessing because of the water from the cucumber. The Flavor God Everything Seasoning in this recipe adds just the right touch!

Cucumber Hummus Ingredients

1 tbls minced garlic
1/4 cup Tahini
2 tbls lemon juice
1 tbls olive oil
1 (15 ounce) can garbanzo beans, drained
1 large cucumber chopped
2 tsp Flavor God Everything Seasoning

So simple! Just add all of the ingredients into your food processor and mix until smooth. Taste and add more seasoning if needed. Serve with pita chips or cut up veggies.

Sriracha Hummus Recipe

How about a little hummus with a kick! If you saw our Sriracha Cauliflower Bites recipe the other day, then you know we love Sriracha.

Sriracha Hummus is incredibly good and you can make it with as little or as much spice as you want. Super easy to make and it’s a great appetizer to bring along to any party.

To mix we recommend using the Kitchen Aid small food processor.

Ingredients:

1 (15 oz.) can chickpeas
2 Tbsp. olive oil
1/4 cup lemon juice
1/4 cup Tahini
1 Tbsp minced garlic
1/2 tsp salt
1/8 tsp cumin
2 Tbsp Sriracha

Sriracha Hummus Ingredients

Start out by draining the can of chickpeas, then add to a food processor along with the olive oil, Tahini, lemon juice, garlic, salt, and cumin. Process until smooth, adding more olive oil as needed.

The original recipe said that you can  add 1/4 – 1/2 cup water, but you can add more olive oil for a creamier hummus and that’s what we did.

Add your heat: Start out with 1 Tbsp of Sriracha and taste. Add more to your liking. We like it hot so we added 2 Tbsp.

We served ours with pita chips and baked almond crackers. It was a hit!

Meatball Recipe

I called this recipe Amazing Meatballs because they were just that. We were actually testing a recipe called Best Baked Meatballs and we can’t argue.

We were shocked by how light and delicious they were. To go with the meatballs we made linguine noodles and garlic bread. Next time we are going get some french bread and provolone or fresh mozzarella and make sandwiches.

Cheese Mixture

In your first bowl combine:

1/2 Cup Fresh Ricotta
2 Tbls chopped parsley
1 tablespoon of ground fennel
1 tsp chili pepper flakes
2 tbls oregano
2 cloves of garlic minced
4 tbls of Parmesan cheese

In 2nd bowl:

2 lbs of ground beef 80/20
2 eggs
1/2 cup Italian bread crumbs
1 tsp black pepper
1 tsp of salt

Preheat oven to 425 and grease your baking dish. After mixing both bowls separately, combine the two and mix gently together.

Meatballs

Roll your meatballs into desired size balls (ours were golf ball size), drizzle with a little olive oil. Place meatballs on baking sheet next to each other.

Bake for 20 minutes then take out and drain extra fat. Spoon your favorite red sauce over each meatball and bake another 15 minutes.

Sriracha Cauliflower Bites

Sriracha Cauliflower Bites Recipe: One word that describes these spicy little nuggets…addicting. Seriously, we couldn’t stop eating them.

A friend recently posted a recipe for Spicy Buffalo Cauliflower Bites and I knew I need to try them. That recipe called for Franks Hot Sauce. My house is all about Sriracha Hot Chili Sauce.

Ingredients

Ingredients:

1 large head of cauliflower (break into florets)
1 cup water
1 cup flour
1 tbls. garlic powder
1/2 cup Sriracha Sauce
1 tbsp unsalted butter (melted)

Preheat your oven to 450 degrees. You will need a large baking sheet. Even if you use a non-stick pan you should still lightly spray with cooking oil.

Batter

In a medium size bowl combine flour, garlic powder and water. Whisk until completely mixed together.

Place you florets in the flour mixture and coat thoroughly. Once coated place on baking sheet and cook for 20 minutes.

Cauliflower

In a small bowl combine the melted butter and Sriracha sauce together.

Sriracha Sauce

At the 20 minutes mark pour the hot sauce mixture over the cauliflower. I used a basting brush and brushed the hot sauce on. I did this so that I could make some that would be less spicy for my daughter. Cook for an additional 5 minutes.

Cauliflower Baked

These are crazy good! We served them with celery, blue cheese dressing and ranch dressing. We can’t wait to make them as an appetizer for when we have friends over.

Baked Pesto Chicken

Baked Pesto Chicken Recipe: Looking for healthy meal options? Want to lower your carb intake? How about something to prep for lunches all week? Well we’ve tried a recipe that answers YES to all of the above.

Pesto Ingredients

Pesto Ingredients:

2 cups basil
1/4 cup pine nuts
1 cloves garlic
3/4 cup olive oil
1/2 cup grated Parmesan cheese
Zest and juice from half lemon
Salt and pepper to taste

In food processor combine basil, pine nuts and garlic. Pulse until coarsely chopped. Then add in your favorite olive oil, lemon juice, lemon zest and process until smooth. Season with salt and pepper. Mix in cheese. If you don’t have time to make pesto, store bought will do.

Pesto

6 boneless and skinless chicken breasts, salt and ground black pepper for seasoning chicken. Trim off visible fat and tendons from chicken pieces, then cut each chicken breast lengthwise into 2 or 3 pieces.

Raw Chicken

Preheat oven to 375F.  Spray a 9″ x 12″ baking dish with non-stick spray, spread 1/2 cup basil pesto over the bottom of the dish. Lay chicken strips over the pesto, then spread 1/2 cup more basil pesto over the chicken.

Cover with aluminum foil and bake the chicken for 30-35 minutes, until chicken is cooked through. Serve hot.

Bulletproof Coffee

To make bulletproof coffee you will have to dedicate a little more time in the morning, but the pay off lasts the entire day. I prep by cutting butter for the week to save on time in the morning. Now I’ve read many articles that explain how this works and how to make it, and after trying just a few variations, for me, this process works the best:

1 cup of fresh French pressed coffee (Café Du Monde)

2 tablespoons of Kerrygold Irish Organic butter

2 tablespoons of MCT oil (pure coconut oil)

Throw these three in a blender and mix for 10 seconds and enjoy! That simple. It tastes like a frothy buttery latte. If you eat with your coffee in the morning, eat protein or it basically defeats the purpose. Not only is this a great pick-me-up that lasts the entire day without need for other cups of coffee, but it also is training your body to burn fat rather than carbs. So eating carbs with it is NOT recommended. The fine tuned recipe gives you the caffeine high with out the jitters and without the crash. Just a slow come down about 10-12 hours after consuming. Now the MCT oil may increase bowel movements, so you might want to start out at 1 tablespoon. I think that just depends on an individuals body. I have no problem with 2 tablespoons.

Bulletproof Coffee Recipe

I buy the MCT Oil at Whole foods for $25 a bottle, it is also available on Amazon. Kerrygold Organic Irish Butter is easy to locate but I find it to be cheapest at Costco. Café Du Monde can be found virtually anywhere. Cheaper at a big name grocery store. If you give it a try, let me know how it goes and what you think of the taste. Enjoy!

Stuffed Peppers Weve Tried It

Stuffed peppers…the healthy way. I found this Santa Fe Turkey Stuffed Peppers recipe on Skinny Taste blog, doubled it and added a few of my own touches. Delicious.

Stuffing Ingredients:

1 lb 99% lean ground turkey
1 1/2 cups canned black beans, rinsed and drained
2 hot pickled Serrano pepper, chopped (or jalapeno) more to taste
2 large diced tomatoes
2 cloves garlic, minced
1 small chopped onion
4 tbsp chopped cilantro, plus more for garnish
1 tsp oregano
1 tsp chili flakes
1 tsp cumin
kosher salt to taste

Peppers:

6 red bell peppers
2/3 cup reduced sodium, fat free chicken broth
1 1/2 cups shredded reduced-fat Sargento Monterey Jack cheese
2 tbsp chopped scallions, for garnish

Stuffed Peppers Ingredients

Directions:

In skillet, brown the turkey and season with salt. When browned, add onion, garlic, black beans, cilantro, Serrano pepper, diced tomatoes, cumin, oregano and chili flakes. Mix well and simmer on low, covered for 20 minutes.

Ground Turkey Stuffed Pepper prep

Preheat oven to 350 degrees. Clean out the peppers, removing seeds and stem. Cut a small amount of the bottom of the pepper so that it will stand straight on baking sheet. Fill each pepper with turkey mixture. Pour about 1/3 cup water or chicken broth on the bottom of the dish. Cover tight with foil.

Stuffed Peppers

Bake 45-50 minutes, or until the peppers become soft. Remove foil, top each with 1 1/2 tsp of cheese and bake uncovered for 5 minutes.

Next time I make this recipe I plan on adding tomato sauce and maybe switch up a few of the ingredients. I really enjoyed it!

The Serving Size is for if you were to cut the peppers in half. We left them whole because this was our full meal with no extra sides. Serving Size: 1/2 pepper, Calories: 160, Fat: 3 g, Carbs: 19 g, Fiber: 4 g, Protein: 15.5 g, Sugar: 1 g, Sodium: 119 (without salt).

This banana oatmeal cookie recipe tastes too good to be healthy, but it is. Using only 4 ingredients makes for a quick and easy healthy treat.

Ingredients

2 ripe bananas, mashed
1 cup Quick or Instant Oats
1/2 cup of dark chocolate chips
1 heaping tablespoon peanut butter

Instructions

Preheat your oven to 350 F. Mix all ingredients thoroughly. Drop a spoonful of dough onto your cookie sheet. Bake for 15 minutes.

The recipe we found didn’t call for putting them in the refrigerator, but we put them in and think they taste better cold.

I would say that eating one is all you need. The sweetness from the banana and dark chocolate really feels like you are indulging.
