Coconut Flour Banana Muffins Recipe: My house smells great! All I have to say is that they turned out pretty tasty…with a generous amount of butter to melt into the dryness.

I didn’t alter this recipe that I found on My Gutsy blog. However, I added different toppings to each muffin, pecans on some, dark chocolate chips on some and cacao chips in some. Just a dash though.

Banana Cupcake Ingredients

Ingredients:

1 cup organic coconut flour

1 1/2 cup very ripe bananas (2-3 bananas)

4 eggs

6 tbsp butter or coconut oil (melted)

5 tbsp raw honey

2-3 squirters full of stevia

1/4 tsp sea salt

1 tbsp cinnamon

1/2 tsp baking soda

1 tbsp vanilla

Preheat your oven to 300 degrees. Place liners in your muffin pan.

In a med bowl smash the bananas and mix in the honey, coconut oil, vanilla, eggs, and stevia until combined.

In a separate bowl mix the coconut flour, baking soda, sea salt, and cinnamon. When using a more dense coconut flour it will turn out much fluffier if you sift it first. Use 1 cup of sifted coconut flour.

Add the dry ingredients to the wet and stir until just combined. Spoon the batter into your muffins liners (90% full.) Bake for 65 minutes at 300 degrees.

This recipe was made for Coconut Flour Banana Bread. If making bread add oil or butter to your bread pan and then line with parchment paper. Cut 2 pieces and fit them in the baking pan.

Bake for 75 minutes at 300 degrees. The top and edges should be a golden brown. Remove form oven and let cool for 15 minutes in pan. Store in a nontoxic container in the fridge.

Quick and Easy Coconut Shrimp Recipe: For Valentine’s Day my daughter put in a request for coconut shrimp. After a little looking around we found this easy recipe. I always go for easy the first time around.

Let me just say that getting any kind of compliment from my 14 year old is rare.  She really enjoyed these and is already talking about when I make them again.

Ingredients:

1/3 cup flour
1/2 teaspoon salt
1/2 teaspoon pepper
2 large eggs (beaten)
3/4 cup Panko bread crumbs
1 cup sweetened shredded coconut
1 pound raw large shrimp (peeled and devein)
Coconut oil or vegetable oil

Coconut shrimp ingredients

Directions: You will need 3 bowls.

Bowl 1: Combine flour, salt, and pepper.

Bowl 2: Beat eggs.

Bowl 3: Add Panko and coconut, mix well.

In a large skillet add enough coconut oil to cover the bottom. Keep temp on medium heat.

First dip your shrimp into the flour, then eggs, and then dredge the shrimp into the coconut mixing, pressing gently to adhere. Make sure that you get a lot of coconut on each shrimp. Set the coated shrimp aside on a plate and coat the remaining shrimp.

It is easiest if you fry the coconut shrimp in couple of batches, you don’t want to crowd the pan. Flip when they are golden brown (about 2 minutes each side.) If you like them a bit crispier fry each side for 3 minutes.

Place on paper towel when they are done to get rid of any extra oil. Plate up and serve with sweet chili sauce.

Harvest Cheddar Soup

Harvest Cheddar Soup Recipe: Nothing beats a bowl of homemade soup on a chilly day! Recently I purchased a new Vitamix and have been wanting to try making soup with it, I picked Harvest Cheddar Soup to give it the test. Could it really be as easy as putting the ingredients in our Vitamix and turning it on? And if so, was it going to taste good?

Well the answer to both of those questions is yes and yes! The soup came out at the perfect temperature and was simply delicious! I have never had soup made with apples before and was pleasantly surprised at how it really made the soup taste like something from an upscale restaurant.

Harvest Ingredients

Ingredients:
2 Cups chicken broth
1/4 medium onion
1 stalk celery
2 medium apples
2 medium potatoes baked, cooled and halved
1/8 tsp ground nutmeg
1/8 tsp ground black pepper
1/2 tsp salt
1 cup shredded cheddar cheese

Directions: Place all ingredients except cheese in the Vitamix in the order of ingredients. Select the Hot Soup program and start machine. Allow machine to complete the cycle then set to variable 1 and slowly increase sped to variable 6. Remove the lid plug and drop in the shredded cheese. Blend for an additional 10 seconds.

Serve immediately garnished with a small amount of shredded cheese and green onions.

Oreo Cheesecake Chocolate Cake Recipe

Oreo Cheesecake Chocolate Cake Recipe: It was my son’s birthday and I wanted to make him a very special cake. The “funny” part is that he doesn’t eat cake or chocolate, but everyone needs a cake for their birthday!

I found this recipe on OMG Chocolate Dessert blog and it is truly amazing. I adapted the recipe and used a boxed chocolate cake, which turned out great. This cake looks like you bought it from a cake shop, but really it was quite easy to make.

Chocolate Cake:
1 Box of chocolate cake mix

Oreo cheesecake filling:
1 1/2 cups heavy whipping cream
8 oz. Cream Cheese (softened)
3/4 cup powdered sugar
12 Oreo Cookies (crushed)

Milk chocolate ganache:
8 oz. milk chocolate (finely chopped)
1 cup heavy whipping cream

Garnish:
1/2 cup chocolate chips
3/4 cup whipped cream

Cakes

Cake: Prepare cake per instructions on box. Use two 9 inch round baking pans. Once baked cool for 10 minutes in the pans. Remove cakes from the pans and place on wire racks upside down (this flattens domed cakes) and cool completely.

Oreo cheesecake filling: In a large mixing bowl mix heavy whipping cream until firm peaks form. In another mixing bowl beat cream cheese and sugar until it’s smooth. Combine cream cheese and whipped cream and stir in crushed Oreo.

Assemble the cake: Spread the cheese cake filling on bottom layer of cooled cake, carefully place the second layer on top of filling. Place assembled cake in the refrigerator to set and cool (30 minutes.)

Chocolate cake

Ganache: In a sauce pan over low heat melt chopped milk chocolate, remove from the heat and stir in heavy cream. Stir the mixture until it is smooth and then pour over the cake. If the Ganache is  too runny, cool it a little until it thickens. Be sure that it is still thin enough to drip down the sides of the cake.

We garnished ours with chocolate chips & whipped cream and sprinkled some crushed Oreos over the top. Your family or guests will not believe you made this cake yourself!

Orange Sesame Chicken Recipe: This is the light version of orange chicken. It was equally as good as the full calorie recipes we have used in the past.

We found this recipe on Cooking Classy blog and we will definitely be making this again. It may look like there are a lot of steps to this but it really was easy to make.

Orange chicken ingredients

8 chicken tender filets (dice into 1 inch pieces)
1 1/2 Tbsp Canola oil
Salt and pepper
2 cloves garlic (minced)
2 tsp orange zest
1/3 cup fresh orange juice
1/4 cup low-sodium chicken broth
3 Tbsp low-sodium soy sauce
3 Tbsp honey
2 1/2 Tbsp granulted sugar
3/4 tsp onion powder
1/4 tsp dried ginger
2 Tbsp white vinegar
1/2 tsp Sriracha hot sauce (optional)
2 Tbsp cornstarch
Sesame seeds

Cooking instructions: Heat large skillet or Wok on medium high heat. Add canola oil, once hot add chicken pieces, season lightly with salt and pepper. Cook chicken, stirring occasionally, until it is completely cooked through. Remove chicken from pan and set aside and leave the remaining oil in the pan.

Turn burner down to medium heat and return skillet to heat. Add the garlic and saute 30 seconds. Remove the skillet from heat. Add OJ, 1/4 cup chicken broth, orange zest, soy sauce, honey, sugar, onion powder, ginger, vinegar and Sriracha (if desired.) Season with salt and pepper to taste and return to heat.

Orange Chicken Sauce

Stir together cornstarch with remaining 2 Tbsp chicken broth in small bowl until blended. Pour mixture into skillet, stir constantly until sauce bubbles and thickens. Remove from heat and toss chicken in sauce mixture.

You are ready to serve. We had white rice and pea pods with almonds with our orange sesame chicken. Delicious!

Langoustines and Zucchini Pasta Recipe: Best low carb home cooked dinner thus far. Zucchini noodles and langoustines in a white wine garlic sauce.

Ingredients:

1 medium zucchini
4 cloves of garlic
1/3 cup dry white wine
1 tbsp butter
6 oz langoustines
1 tsp lemon juice
1 tbsp parsley
Red pepper flake
Salt and pepper

Ingredients

Heat butter in medium pan and add garlic and half of parsley. Cook until garlic is golden. Add in white wine. Let reduce by half. Add in red pepper flakes, salt and pepper to taste. Add langoustines (or substitute shrimp) heat until warm. Turn off heat. We bought our langoustines at Trader Joe’s.

Take the lemon juice, spiraled zucchini and add to the pan and toss. Top with remaining parsley. I put on a few flakes of Parmesan at end. Healthy (just a bit of wine) and so very delicious!

To make our zucchini pasta we used the As Seen on TV Veggetti.  It worked, but it made more of a ribbon as compared to the blue handle tool (shown below), which made a better separated noodle form. Just not as expected and Veggetti is inconsistent from other pictures seen online. Mine clumped, where as others looked like loose, free noodles (see photos below for examples of noodles.)

Looking or the perfect side dish to serve with dinner? Pea Pods with Almonds are a delicious treat and good for you.

Ingredients:

Pea Pods
Slivered Almonds
Grape Seed Oil
1 tablespoon of minced garlic
Sea Salt

You can use any kind of pan you like, we prefer a cast iron skillet. Heat up 2 tablespoons of grape seed oil (med-high heat) and toast your almonds to the half way point. Add garlic and pea pods and mix well. Season with sea salt. Stirring often so that you don’t burn your almonds on the bottom of the pan.

Be sure not to cook your pea pods for too long, they taste great when they are still at the crisp point. If you want to mix it up a little bit add a some Sriracha sauce to give the pea pods some heat.

Pistachio Pudding Dessert Recipe: Do you have a sweet tooth? Look no further this pistachio pudding dessert will be sure to satisfy you. This is hands down the best dessert I have had in a long time. It’s creamy deliciousness will surely please any crowd.

Pistachio Pudding Dessert Recipe

Dessert Crust:

1 stick melted butter
1/2 cup flour
1 tbls sugar
1 1/2 cup crushed graham crackers

LAYER 1:

1 cup powdered sugar
1 (8oz) cream cheese
1 cup whipped cream (can substitute Cool Whip)

LAYER 2:

2 regular sized packages of instant pistachio pudding mix
3 cups milk

TOPPING:

1 cup whipped cream (can substitute Cool Whip)
chopped pistachios

To make the crust first mix butter, flour, sugar and graham crackers. Press into 9×13 inch pan. Bake at 350 for 20 min. Let cool.

Graham Cracker Crust

For the first layer that goes on top of your crust mix the powdered sugar, cream cheese and whipping cream. Spread evenly on cooled dessert crust.

Second layer, whisk together pudding mix and milk until thick and then put in refrigerator to set up. When this mixture is firm spread on top of cream cheese layer.

Top the dessert off with a layer of whipping cream and chopped pistachios. Refrigerate.

Once thoroughly chilled slice into good size servings and treat your friends and family to a little slice of heaven.

If you are on a high-protein low-carb diet or just watching your carbs in general, then this All Protein Meatloaf Recipe is for you.

Ingredients:

1 Lb Grass fed beef
1 tbsp Worcestershire sauce
1 (4oz) can tomato sauce
1/3 cup crushed fried pork skin
1 egg
2 1/2 tbsp chili powder
1 tbsp garlic salt
1 tbsp garlic pepper seasoning
1/4 medium white onion
1/4 bell pepper

Baking directions: First preheat oven to 375 degrees F.

In large bowl add, grass fed beef, bell peppers, onions, Worcestershire sauce, tomato sauce, crushed pork skins and eggs.

Season your meat mixture with chili powder, garlic salt and garlic pepper seasoning. Mix meatloaf until thoroughly blended.

In a greased loaf pan, form meat into a loaf shape. Bake uncovered for 35 to 40 minutes. Let stand for 5 minutes before slicing and serving.

This low carb loaf of meat had a nice spice to it but was missing some flavor. It was good, but could be better. Perhaps adding more onion (or sauteed onion) along with a bit more herbs and seasoning. Play around with it and let us know what you did to improve what we did.

Cheddar Stuffed Meatloaf Recipe: Just saying cheese makes you smile, that’s why it’s the universal word said before getting a picture taken! So adding cheese to a recipe is a sure way to make your family smile at dinner.

This cheddar stuffed meatloaf was a BIG hit with my family. I would suggest cutting up the entire meatloaf at the start of the meal to save yourself time during dinner, everyone will be asking for seconds.

Ingredients:
1 pound lean ground beef
1/2 pound mild Italian sausage
25 crushed saltine crackers
1 tablespoon Worcestershire sauce
1/2 onion diced
1 large egg beaten
6 ounces shredded cheddar cheese
Ketchup

Preheat oven to 350. In a large bowl combine beef, sausage, crushed crackers, sauce, onion and egg. Divide mixture in half.

Meatloaf 1

Gently press half the mixture into loaf pan. Press the center down to create a rim around the outside of the meatloaf. Add shredded cheese to the center of the meatloaf.

Form the remaining half into the same size as the meatloaf pan and set on top. Gently press the sides together to seal in the cheese. Pour ketchup over the top and spread around to create an even glaze over the top.

Place meatloaf in the oven for approximately one hour. Remove from the oven and let rest for a few minutes. Serve and enjoy!
