Homemade Toffee Recipe: So as luck would have it Shirley is allergic to nuts, so I don’t have to share this easy to make toffee with her. Boom!

1 cup raw almonds
1 cup unsalted butter, cubed
1 cup sugar
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1 1/2 cups semi-sweet chocolate chips
1/3 cup pecans, chopped
Preheat oven to 350 degrees F. Line your baking sheet with parchment paper. Spread almonds out evenly on top of your parchment lined baking sheet.
Toast your almonds in the oven for about 10 minutes and then set aside.
In saucepan, combine butter, sugar vanilla and salt over medium heat. Whisk continuously for 7-10 minutes or until butter has melted and mixture is almond brown in color.
Once you have removed from the stove, immediately spread your caramel mixture evenly over the almonds. Cover the top of your caramel with chocolate chips. Let the chocolate chips sit for 1-2 minutes and then spread them in an even layer until smooth. Finish off by sprinkling with pecans.
Recipe complete. Now all you have to do is let your toffee cool completely (about 2 hours.) Break into pieces and eat.

1 Oreo cookie pie crust
1 box instant chocolate pudding
8oz Cool Whip
2 C milk
6 Peanut Butter Cups
Mix 1 box of instant chocolate pudding mix and milk as directed until firm. Add Cool Whip into pudding.
Pour your pudding mixture into the Oreo pie crust. Top with chopped Peanut Butter Cups. Refrigerate until ready to serve. So simple and so good!

Lemon Loaf Cake Recipe: I love just about anything lemon! Lemon bars, lemon cake, lemonade, lemon skittles and even just straight lemons! My favorite is the lemon loaf cake from Starbucks and was hoping to recreate that.
There are so many recipes out there for different kinds of lemon cakes, but until now I wasn’t getting the full lemon flavor that I was looking for. Combining a couple recipes I came up with the perfect one for flavor, but not as dense as Starbucks.
My initial plan was to make extra and share with some friends, so I made both a loaf and cupcakes. Truth be told the cupcakes were done first and we ate most of them before the loaf was even finished baking. There will be no sharing.
1 box yellow cake mix
2.9 oz box cook & serve lemon pudding
1/2 cup vegetable oil
4 large eggs
1/2 cup milk
8 ounces sour cream
6 tablespoons lemon juice
Preheat oven to 350 degrees. Spray 2 loaf pans (9×5) or cupcake pans with cooking spray.
Combine all cake ingredients into mixing bowl. Mix for 1 1/2 minutes. Pour batter into prepared loaf or cupcake pans. For loaf pans bake for about 50 minutes. For cupcake pans bake for about 15 minutes until golden brown and cooked through. Remove from oven and let cool for about 10 minutes before removing from pans. Let cool completely before frosting.
2 cups powders sugar
4 tablespoons lemon juice
1 tablespoon water
Combine powdered sugar, lemon juice and water (if needed) in medium bowl. Drizzle icing over completely cooled loaves or cupcakes and enjoy.
Both the loaves and cupcakes turned out light and fluffy and were a great treat for my family.
Crock Pot Blueberry Pie Recipe: This may not be the quickest dessert to make on the planet, but it sure is tasty and it will have your house smelling amazing.
As far as ingredients go – 3 – that’s it. It reminds me of a dump cake.
2 – 21oz cans of blueberry pie filling
1 box yellow cake mix
1 cup melted butter
Spray your crock pot with non-stick cooking spray and then pour in both cans of blueberry pie filling (you can use any kind of filling you like.) Follow by pouring the box of cake mix over top blueberries (do not mix.) Drizzle melted butter over top, cover and cook on high for 3 hours.
At the 3 hour mark take the cover off of your crock pot and cook for another 30 minutes. This is to crisp up the top a little.
We served ours hot with vanilla ice cream. It was delicious!
Phatphood Marshmallow Brownie Recipe: Usually we send Phatphood out to local festivals and restaurants to review the cuisine. This time we talked Phat into sharing his recipe for these marshmallow delicious looking brownies.
12 graham crackers
6 tbsp butter
Put graham crackers into food processor and pulse until they are finely ground. Add butter and pulse until mixed. Press mixture into the bottom of 8×8 baking dish.
Mix brownie mix accordingly. Pour mixture over crust. Bake at 325 for 35-40 mins.
Cut jumbo marshmallow in half. Top baked brownies with marshmallows. Bake at 325 for 3 mins.
If marshmallows are not toasted enough, turn on the broiler for one minute to brown the tops. Enjoy!

Pumpkin Poke Cake Recipe: Some call this recipe Pumpkin Better Than Sex Cake, either way we think you will agree that it is incredibly good and it will leave you wanting more.
1 box yellow or spice cake mix and any ingredients it requires.
1 can of Pumpkin Puree
1 can sweetened condensed milk
1/2 cup caramel topping (jar)
1 – 8 oz container cool whip thawed (best at room temp)
1/4 cup of crushed Heath Candy Bars
Make your cake according to directions on the box and add 1 can of pumpkin puree. Mix thoroughly and then pour it into a 9×13 pan. Use the cooking instructions on the box.
Once done let the pumpkin cake cool for 5 minutes.
While still warm poke holes in cake with the handle end of a wooden spoon. Slowly pour sweetened condensed milk over the top of cake making sure some gets in all the holes.
Next drizzle the caramel topping evenly over the cake, making sure some caramel gets in the holes as well. Then spread your cool whip over the top evenly. Sprinkle with Heath candy topping.
Put in the refrigerator until ready to serve. It is best when chilled overnight. ENJOY!!

2 Ingredient Ice Cream Bread Video: Over the weekend I was searching the web while craving something sweet. I should add that I was limited on what I could make because I also needed to go grocery shopping. In my mind anything with ice cream is good, so when I came across 2 Ingredient Ice Cream Bread I had to try it.
Ingredients: Self rising flower and the ice cream of your choice, what could be easier? I used Blue Bunny Double Strawberry Ice Cream for my bread.
2 cups of Ice Cream- softened (any flavor)
1 1/2 cups of self rising flour.
I put the 2 cups of ice cream in the microwave for around 30 seconds to soften. Then added the flour and ice cream together in a medium mixing bowl. Stir until they are fully mixed together.
Put into a greased bread pan. Flatten with spoon
Bake for 45 minutes at 350 degrees.
After 45 minutes I was quite surprised to see a nice loaf of bread fully cooked in the oven. The recipe worked!
I had expected the bread to be a bit sweeter having used the ice cream, and it was a little heavy but other than that it was pretty good.
To keep with the ice cream theme, I served it up warm with a scoop of Blue Bunny Vanilla Ice Cream and that added the sweetness I was looking for.

Raspberry Lemonade Pie Recipe: This is as good as it sounds! It’s one of those quick and easy recipes that you will make over and over.
6oz Keebler Graham Ready Pie Crust
8 oz Kraft Philadelphia Cream Cheese (1/3 less fat)
1 Packet Crystal Light Raspberry Lemonade Singles
1/4 Cup Milk
8 oz Cool Whip (thawed)
1 TBLS. Sugar
Mix Cool Whip, cream cheese, Crystal Light (start with half the raspberry lemonade and taste for desired flavor), milk and sugar in bowl with mixer until completely mixed.
Using a spatula scoop the mixture unto you pie crust. Chill in the refrigerator for 1-2 hours before serving.
You can garnish with fresh raspberries and a little scoop of Cool Whip on each piece.
This would be a great dessert to make for a grill out or picnic. There are a few other Crystal Light flavors that you could try: Pomegranate Cherry, Lemonade, Pink Lemonade and Fruit Punch.
