Avocado and Bacon Egg Rolls Recipe: We are always looking for new delicious treats to make for Sunday funday. We definitely scored a with these little goodies.
Combining a couple different recipes that we found on Pinterest, we came up with avocado and bacon egg rolls. Now, winging it doesn’t always work for us but this time it worked out!
3 ripe avocados
1/2 white onion diced
1/2 Roma tomato diced
1/2 lb bacon
Egg Roll Wraps
Salt & Pepper
Directions: Cut up your half pound of bacon and fry to make bacon bits. While bacon bits are cooling place the avocado, diced onion and diced tomatoes in a bowl and mash (we used a potato masher.)
Salt & pepper your avocado mixture to your liking. Gently fold in the cooled bacon bits to your mixture.
Place one egg roll wrapper on cutting board with one of the corners pointed at you. Place desired amount of filling part way up the wrapper. Fold the corner up over the filling, then fold each side in.
Roll the egg roll up to the top corner. Wet the corner with water and complete the folding. Repeat until all of your mixture is used.
Heat vegetable oil in frying pan and place your egg rolls in the hot oil – fry until golden brown. Serve immediately with your favorite dip. We thought ours tasted delicious dipped in ranch dressing.
