Lasagna Stuffed Spaghetti Squash Recipe

Lasagna stuffed spaghetti squash

Lasagna Stuffed Spaghetti Squash: Losing weight. Eating good. I can’t believe how delicious this recipe is!

Spaghetti Squash

Ingredients:

Spaghetti squash:
1 small spaghetti squash, cut in half and seeded
1 tablespoon oil
salt and pepper to taste

Ingredients

Lasagna meat sauce:
1/2 pound ground turkey
1 tablespoon oil
1/2 onion (diced)
1 cloves garlic (chopped)
1/4 teaspoon red pepper flakes
1 (15 ounce) can diced tomatoes
1 tablespoon tomato paste (optional)
1/2 teaspoon Italian seasoning or oregano
1 bay leaf
1/4 teaspoon paprika
1/2 tablespoon balsamic vinegar
salt and pepper to taste
1/2 tablespoon basil (chopped)

Stuffing

Stuffing for spaghetti squash:
1/2 cup low fat cottage cheese or ricotta
1/2 tablespoon basil, chopped
1/2 cup partially skim mozzarella, shredded

Cooking Instructions:

Preheat oven to 400F. Roasting the spaghetti squash: Brush the inside of the spaghetti squash with oil, season with salt and pepper and roast, be sure that the skin side is up. Bake until tender, around 30 minutes.

Cook the turkey for meat sauce, browning takes about 8-10 minutes, set aside. Heat the oil in a large frying pan over medium heat, add the onion and cook until tender, around 5-7 minutes. Add the garlic and red pepper flakes, cook for 1-2 minutes.

Add the turkey, tomatoes, tomato paste, Italian seasoning, bay leaf, paprika, balsamic vinegar, salt and pepper to your frying pan, bringing to a boil. Reduce heat and simmer while the spaghetti squash is finished roasting and then mix in the basil and remove from heat.

Once the spaghetti squash is done roasting fluff up some of the inside to make your noodles. Divide the mixture of the cottage cheese and basil between the two halves followed by the sauce and the cheese.

Broil in the oven until the cheese has melted and turned a light golden brown, about 2-3 minutes. Watch closely.

Sweet & Spicy Breakfast Stack with Mina Harissa

Sweet & Spicy Breakfast 500

Sweet & Spicy Breakfast Stack with Mina Harissa: So many delicious flavors in this recipe, your family will be begging for more. Turkey, sweet potatoes and peppers make for the perfect combination.

1 large sweet potato
1 lb ground turkey (I used Italian seasoned ground turkey)
1 bell pepper chopped
1/2 medium onion chopped
3 tbsp butter
1tsp garlic powder
eggs
Salt and pepper

Breakfast ingredients

Preheat oven to 375. Cut sweet potato into medallions. Melt 2 tbsp butter in a microwave safe bowl. Pour over potato and add garlic powder, salt and pepper. Toss lose until evenly coated in butter and seasonings. Place the potatoes on a baking sheet and bake for 30 mins, flipping them half way through.

In a medium skillet melt 1 tbsp of butter and add onions. Cook until soft. Add ground turkey and brown until fully cooked. Add in the bell pepper and cook for about 2 minutes. You still want the bell pepper to have a bit of a bite. Fry up a couple sunny side eggs.

To assemble, i did a bottom layer of the sweet potato medallions (roughly 5-6 medallions), topped it with the ground turkey mixture and finished it off with the fried eggs and of course Mina Harissa.

Mina Harissa

Mina has three heat levels of her Harissa, all of them are a perfect addition to any recipe. I dip chips straight into the spicy green chile Harissa. I’ve used the mild Harissa as a spaghetti sauce. The possibilities are endless and the taste is amazing. Move over Sriracha…Mina will literally be on everyone’s tongue within the year. Enjoy!

Banana Muffins 350

Coconut Flour Banana Muffins Recipe

Banana Muffins

Coconut Flour Banana Muffins Recipe: My house smells great! All I have to say is that they turned out pretty tasty…with a generous amount of butter to melt into the dryness.

I didn’t alter this recipe that I found on My Gutsy blog. However, I added different toppings to each muffin, pecans on some, dark chocolate chips on some and cacao chips in some. Just a dash though.

Banana Cupcake Ingredients

Ingredients:

1 cup organic coconut flour

1 1/2 cup very ripe bananas (2-3 bananas)

4 eggs

6 tbsp butter or coconut oil (melted)

5 tbsp raw honey

2-3 squirters full of stevia

1/4 tsp sea salt

1 tbsp cinnamon

1/2 tsp baking soda

1 tbsp vanilla

Preheat your oven to 300 degrees. Place liners in your muffin pan.

In a med bowl smash the bananas and mix in the honey, coconut oil, vanilla, eggs, and stevia until combined.

In a separate bowl mix the coconut flour, baking soda, sea salt, and cinnamon. When using a more dense coconut flour it will turn out much fluffier if you sift it first. Use 1 cup of sifted coconut flour.

Add the dry ingredients to the wet and stir until just combined. Spoon the batter into your muffins liners (90% full.) Bake for 65 minutes at 300 degrees.

This recipe was made for Coconut Flour Banana Bread. If making bread add oil or butter to your bread pan and then line with parchment paper. Cut 2 pieces and fit them in the baking pan.

Bake for 75 minutes at 300 degrees. The top and edges should be a golden brown. Remove form oven and let cool for 15 minutes in pan. Store in a nontoxic container in the fridge.

langoustines and zucchini pasta 350

Langoustines and Zucchini Pasta Recipe

langoustines and zucchini pasta

Langoustines and Zucchini Pasta Recipe: Best low carb home cooked dinner thus far. Zucchini noodles and langoustines in a white wine garlic sauce.

Ingredients:

1 medium zucchini
4 cloves of garlic
1/3 cup dry white wine
1 tbsp butter
6 oz langoustines
1 tsp lemon juice
1 tbsp parsley
Red pepper flake
Salt and pepper

Ingredients

Heat butter in medium pan and add garlic and half of parsley. Cook until garlic is golden. Add in white wine. Let reduce by half. Add in red pepper flakes, salt and pepper to taste. Add langoustines (or substitute shrimp) heat until warm. Turn off heat. We bought our langoustines at Trader Joe’s.

Take the lemon juice, spiraled zucchini and add to the pan and toss. Top with remaining parsley. I put on a few flakes of Parmesan at end. Healthy (just a bit of wine) and so very delicious!

To make our zucchini pasta we used the As Seen on TV Veggetti.  It worked, but it made more of a ribbon as compared to the blue handle tool (shown below), which made a better separated noodle form. Just not as expected and Veggetti is inconsistent from other pictures seen online. Mine clumped, where as others looked like loose, free noodles (see photos below for examples of noodles.)

This low carb loaf of meat had a nice spice to it but was missing some flavor. It was good, but could be better. Perhaps adding more onion (or sauteed onion) along with a bit more herbs and seasoning. Play around with it and let us know what you did to improve what we did.

The Addams Family Great Theatre Company 350

The Addams Family Great Theatre Company Review

The Addams Family Great Theatre Company

This weekend I attended The Addams Family musical put on by GREAT Theatre at The Paramount Theatre in St. Cloud.  Lets see how corny I can be, well… it was a ghoulishly good time!  Dead funny.  Okay, that’s enough.

First, the Paramount is fabulous!  Everything made for a comfortable experience, besides the chairs.  No worries though since they, with theatre goers donations,  will soon be swapped out with new ones after 66 years of numbing our bottoms and aching our backs.  This theatre also offers beer and wine in the lobby for a decent $5 along with candy and snacks.  Definitely check out the paintings along their walls, some are even for sale.

The Addams Family musical was as quirky and dark as the original TV show.  The sets were dark and clever and the musical numbers were entertaining and very Broadway.  All the musical acts were also catchy and filled with big stage dancing, yet performed on the intimate smaller stage that Paramount offers.   There were fun references made from The Honeymooners to Charlie Sheen, and one of my favorites from Grandma to Pugsley after he said he didn’t understand her references, “Well stop texting all the damn time and read a book!”  There were a couple profane words used, nothing too harsh, and some reference to sexual content.

All of the actors did a superb job, however, Uncle Fester stole the show.  With surprisingly superb vocal resonance as well as an entertaining narrator, Brandon Bodien is my notable mention.  Not to take anything away from the other twenty one talented actors that delivered a seamless kooky and spooky musical that I totally recommend seeing during its run of engagement through February 15th.

You can purchase ticket for The Addams Family musical here.

Bulletproof-Coffee 360

Bulletproof Coffee Recipe and Review

Bulletproof Coffee

To make bulletproof coffee you will have to dedicate a little more time in the morning, but the pay off lasts the entire day. I prep by cutting butter for the week to save on time in the morning. Now I’ve read many articles that explain how this works and how to make it, and after trying just a few variations, for me, this process works the best:

1 cup of fresh French pressed coffee (Café Du Monde)

2 tablespoons of Kerrygold Irish Organic butter

2 tablespoons of MCT oil (pure coconut oil)

Bulletproof Coffee Weve Tried It

Throw these three in a blender and mix for 10 seconds and enjoy! That simple. It tastes like a frothy buttery latte. If you eat with your coffee in the morning, eat protein or it basically defeats the purpose. Not only is this a great pick-me-up that lasts the entire day without need for other cups of coffee, but it also is training your body to burn fat rather than carbs. So eating carbs with it is NOT recommended. The fine tuned recipe gives you the caffeine high with out the jitters and without the crash. Just a slow come down about 10-12 hours after consuming. Now the MCT oil may increase bowel movements, so you might want to start out at 1 tablespoon. I think that just depends on an individuals body. I have no problem with 2 tablespoons.

Bulletproof Coffee Recipe

I buy the MCT Oil at Whole foods for $25 a bottle, it is also available on Amazon. Kerrygold Organic Irish Butter is easy to locate but I find it to be cheapest at Costco. Café Du Monde can be found virtually anywhere. Cheaper at a big name grocery store. If you give it a try, let me know how it goes and what you think of the taste. Enjoy!

Stuffed Peppers Weve Tried It 360

Santa Fe Turkey Stuffed Peppers Recipe

Stuffed Peppers Weve Tried It

Stuffed peppers…the healthy way. I found this Santa Fe Turkey Stuffed Peppers recipe on Skinny Taste blog, doubled it and added a few of my own touches. Delicious.

Stuffing Ingredients:

1 lb 99% lean ground turkey
1 1/2 cups canned black beans, rinsed and drained
2 hot pickled Serrano pepper, chopped (or jalapeno) more to taste
2 large diced tomatoes
2 cloves garlic, minced
1 small chopped onion
4 tbsp chopped cilantro, plus more for garnish
1 tsp oregano
1 tsp chili flakes
1 tsp cumin
kosher salt to taste

Peppers:

6 red bell peppers
2/3 cup reduced sodium, fat free chicken broth
1 1/2 cups shredded reduced-fat Sargento Monterey Jack cheese
2 tbsp chopped scallions, for garnish

Stuffed Peppers Ingredients

Directions:

In skillet, brown the turkey and season with salt. When browned, add onion, garlic, black beans, cilantro, Serrano pepper, diced tomatoes, cumin, oregano and chili flakes. Mix well and simmer on low, covered for 20 minutes.

Ground Turkey Stuffed Pepper prep

Preheat oven to 350 degrees. Clean out the peppers, removing seeds and stem. Cut a small amount of the bottom of the pepper so that it will stand straight on baking sheet. Fill each pepper with turkey mixture. Pour about 1/3 cup water or chicken broth on the bottom of the dish. Cover tight with foil.

Stuffed Peppers

Bake 45-50 minutes, or until the peppers become soft. Remove foil, top each with 1 1/2 tsp of cheese and bake uncovered for 5 minutes.

Next time I make this recipe I plan on adding tomato sauce and maybe switch up a few of the ingredients. I really enjoyed it!

The Serving Size is for if you were to cut the peppers in half. We left them whole because this was our full meal with no extra sides. Serving Size: 1/2 pepper, Calories: 160, Fat: 3 g, Carbs: 19 g, Fiber: 4 g, Protein: 15.5 g, Sugar: 1 g, Sodium: 119 (without salt).

Nads Nose Wax

Nad’s Nose Wax for Men and Women Review

Nads Nose Wax

WARNING – SOME PICTURES MAY NOT BE SUITABLE FOR THE EASILY SQUEAMISH. Still looking for a stocking stuffer? Well, I have the perfect gift — Nad’s Nose Wax for Men & Women.

This product does the job, it doesn’t hurt … and let’s face it, manscaping is in! Okay, so I know that medically speaking this is not good for the immune system. A quick lesson, our nostril hairs grow to protect us as our first response to the immune system. They collect and prevent dust and particles from reaching the inside of our bodies, causing mucus to build up and let us know it is ready to dispose.

With that written, I’m guessing that taking away that first response protection may not be too wise, but who wants a 1/2 inch gnarly hair sticking out of their nose during a dinner date? I usually use a trimmer. Unfortunately, a trimmer leaves little short spiky hairs that poke the inside of your nostrils any time you squeeze them together.  Who needs that?

Nads Wax

This product leaves the inside walls of your nostrils silky smooth. It’s quite simple.  Just heat up the wax as instructed. Don’t forget to apply the fun Sanchez stickers (provided) if you happen to have facial hair. Dip the paddle/swabs in the warmed wax and place in each nostril for 90 seconds. Yank and enjoy a garden free nose.

Nads hair removal

Nads nose hair removal

Observe the amount of hair sprouts and compete with your buddies. No more nostril tickle for this guy. He couldn’t be happier with the results and ease of this product.

nose wax

It can also be used as a black head remover or pore strip — and the wax smells very good, too. Definitely a top gift/product of the year for any man in the family. 5/5
